If you were feeling adventurous and wanted to take a road trip to visit the winery featured this week, getting there would be relatively simple. Just hop on the Pan-American Highway, head south for 8,000 miles and voila, you’d arrive! Ok, well, staying on the same road the whole way would be simple… the weeks worth of driving maybe not so much.
Located in the heart of Chile, the Gillmore Winery has been producing beautiful wines for decades. Taking advantage of great temperature variations between night and day, constant winds, and a a dry coastal environment, the family has been organically farming consistently balanced wines year after year.
The 2012 Mariposa is a 50/50 blend of Syrah and Merlot matured for one year in used barrels. The terroir is expressed in this elegant red blend with notes of raspberries, strawberries and a delicate floral element. The palate is balanced yet complex and it pairs wonderfully with lean meats and hearty stews.
